It has been used long before the time of the Incas and traditional preparations are e.g. “Chicha Morada”, Peru’s national drink made from cooked Purple Corn or also “Mazamorra Morada”, a typical dessert. The prepared dishes and drinks all share the same dark purple color, which is due to the high content of anthocyanins, the antioxidants that are also attributed to the many beneficial properties of purple corn.
